January Recipe: VEGAN RAMEN NOODLES

So here we are in January…

Festivities are over and silly diet season is upon us.

Really, the middle of winter is not the time to be living off salad and green juice and if you’ve overindulged at christmas, there’s no need to go to the other extreme to re set the body and the mind.

This recipe is warming, nourishing and bursting with goodness. Fresh ginger and shiitake mushrooms are perfect to help build a strong immune system and ward off any bugs that are going around at this time of year.

Serves 2. Double to serve 4 etc.

For the broth

600ml chicken or vegetable stock

10 shiitake mushrooms

1 inch piece of peeled ginger

1 dessert spoon soy sauce

150g soba noodles

200g firm tofu

6 mushrooms, sliced

75g sugar snap peas

6 spring onions (topped, tailed and chopped)

• To make the broth, place all of the broth ingredients in a saucepan and bring to the boil. Then reduce the heat, cover the pan with a lid and leave to simmer for about 30 mins.

• Remove the ginger & shiitakes from the broth and discard. Place the noodles in the broth and bring to the boil, then reduce the heat so it’s gently bubbling away and for around 5- 8 minutes until the noodles are cooked (depends what type of noodles you’ve gone for) 

Give the noodles a good stir with a fork every now and then to stop them sticking together. 

• Pat the tofu dry with a clean tea towel or paper towel. Place 2 tablespoons cooking oil in a frying pan with 2 tablespoons water & 1 dessertspoon soy sauce. 

  Turn the heat to medium high, add the tofu, mushrooms and sugar snap peas to the pan. 

• Stir fry for around 5 mins until the tofu has turned golden brown and the mushrooms and sugar snaps are cooked through. If the liquid evaporates before the tofu & veg are cooked, just add a bit more water and turn the heat down a little.

• Divide the tofu and vegetables between 2 bowls, then add half the noodles to each bowl, and same with the broth. 

• Decorate with the chopped spring onion. Chopped cashew nuts and fresh coriander also work well as decoration. 

That’s it. You should be feeling better already!
