Peanut
butter
& Maple
Granola
•
110g rolled oats
•
75g pecan chopped
•
25g flaked almonds (not
the toasted ones!)
•
1 tablespoon light olive
oil (or melted coconut
oil)
•
1 tablespoon runny
peanut butter
•
2 tablespoons maple
syrup
Overnight Oats (Serves 1)
•
½ cup rolled oats + 1
dessert spoon
•
½ cup milk of your
choice + 1 dessert spoon
•
1 teaspoon flaxseeds
•
1 teaspoon raisins.

The outside edges of the granola
tend to cook first and it can clump
together, so break it up and move
the outside bits to the inside a
couple of times during cooking.)
1. Line a baking sheet with
baking paper.
2. Mix the oats, pecans and
almonds together and set to
one side.
3. In a bowl, whisk the peanut
butter, maple syrup and olive
oil together.
4. The messy bit! I think it’s
better to use your (clean)
hands for this bit, but you can
use a spoon if you want to.
Combine the wet ingredients
with the dry. You want to
rub the peanut butter Maple
mixture well into the dry
ingredients so that all the dry
ingredients are evenly coated.
5. Spread the granola out on the
baking paper, as thinly spread
as possible.
6. Bake for about 20 - 25 mins
(depending on how toasted
and crispy you want it)
7. When it looks golden brown,
remove from the oven and
leave to cool (it’ll crisp up as
it cools).
8. Transfer to an airtight
container.
Overnight oats
Continuing our oat theme, another
super easy breakfast idea. I’ve
always found overnight oats hard
to get the right texture, but the
simple formula of 1 to 1 (oats to
milk of choice) has been a game
changer!
1. Mix the dry ingredients
together, then add the of milk
of your choice.
2. Place in a bowl, or a container
of some sort, and cover with a
plate (or put the lid on if it’s a
jar or storage container)
3. Place in the fridge overnight.
4. Add yogurt, fruit, nuts, peanut
butter – whatever you fancy!
One less thing to think about in the
morning!
This granola is much lower in sugar
than the shop bought granolas and
has the added benefit of protein
from the peanut butter and healthy
fats from the pecans.
Super easy and satisfying to make
your own granola.
Preheat oven to 160 c
Tip: (a note on oven times! All
ovens seem to vary so 20 mins in
one oven might take 30 mins in
another. You want the mix to be
