Nothing says autumn like pumpkin
spice everything and this cake is a
great way to use up any pumpkin
flesh if you’re carving one for
Halloween.
This cake is a single layer cake
but if you’d like to make a double
layered cake, simply double the
ingredients and pour the cake mix
into two separate cake tins.
Once cooled, sandwich the two
layers together with half of the
icing, and then spread the rest on
top layer.
You will need to preheat the oven
to 180c.
Cake tin should be 7 – 7.5
inches in diameter. I use a loose
bottomed tin and put a layer of
baking paper on the bottom, then
grease the sides with butter or
margarine, but you probably have
your own preferred way of doing
it.
Method:
1. Grate the pumpkin or butter
nut squash
2. Place all the cake ingredients
into a blender (except the
pumpkin and raisins) and blitz
to a smooth batter.
3. Stir in the pumpkin / squash
and the raisins
4. Pour into prepared tin and
bake for around 40 – 45 mins.
5. I’ve said it before, but I’ll
say it again! Ovens really
vary – you want the top to be
golden brown and a skewer
poked in the middle of the
cake comes out clean (ie no
uncooked cake mix on it).
6. Once it’s cooked, gently
remove from the tin and
place on a wire cooling rack
to cool.
7. Once cool to the touch,
prepare the icing.
Moving on to the orange spiced
icing -
1. You want the butter at room
temperature so it’s soft
enough to mix.
2. Beat all the icing ingredients
together.
3. If it’s too thick, add some
more orange juice, little by
little so you don’t thin out the
mixture too much!
4. Spread the icing over the
cake, decorate with some
chopped pecans or walnuts
and maybe a little more
cinnamon.

Pumpkin Spice Cake
•
150g self-raising flour
•
150g grated pumpkin (or
butternut squash) flesh
•
150g soft brown sugar
•
1 teaspoon vanilla extract
•
3 large eggs
•
150g spread (like flora) I
find butter too heavy for
this recipe
•
2 teaspoons mixed spice
(more if you want a
stronger taste)
•
Handful of raisins.
•
Teaspoon baking powder
Orange Spiced Icing
•
120g unsalted butter
•
180g icing sugar
•
1 teaspoon cinnamon
•
1 tablespoon juice
of a fresh orange or
clementine
