September Recipe: Cucumber & Avocado Soup Peanut Butter Gingerbread Men

Start of a new month and a new season.  September can be a weird mix of sunny summer days and colder, autumnal days. 

So this month’s recipes will cover you for both! First up we have a summery soup. Quick, easy and packed with nutrients. 

Cucumber & Avocado Soup.  Serves 2

  • 1 large avocado
  • ½ a large (or one small) cucumber
  • 8 spring onions 
  • 300ml milk (I used cashew)
  • Salt & pepper to taste.

To give it a bit more kick I add a generous teaspoon of Dijon mustard. 

Chili powder would work well too.

  1. Scoop the flesh out of the avocado. 
  2. Cut the cumber into chunks.
  3. Top and tail the spring onions.
  4. Place in a blender with the milk & blitz
  5. Season to taste. 

Great British bake off (I assume) will be back on our screens so here’s a recipe to get you back into the baking swing. It has around half the amount of sugar of regular biscuits and has added nutrients from the peanut butter. 

I used rice flour but plain wheat flour works great too.

Peanut butter gingerbread men

  • 100g plain flour
  • 50g dairy free spread (I used flora)
  • 50g brown sugar
  • 2 teaspoons ginger powder
  • 50g smooth peanut butter
  • 1 dessertspoon golden syrup.
  1. Preheat oven to 200c 
  2. Mix the flour, ginger powder and sugar together.
  3. Using your fingers work the dairy free spread and peanut butter into the mix until it resembles sand.
  4. Mix the golden syrup in – the mixture should now be     able to come together in a ball of dough. 
  5. Trouble shooter!  If the dough is too dry add a little  water, spoonful by spoonful until you get the desired consistency. If it’s too wet do the same thing with some extra flour.
  6. Roll the dough out & cut into shapes using a cookie cutter. (I roll it out onto a sheet of greaseproof paper as it’s easier just to transfer the paper to the baking sheet.)
  7. Place the baking sheet into the oven for around 13 minutes (the biscuits should be just starting to turn golden brown). Remove the tray from the oven and leave to cool (they will be soft when they come out, don’t worry they harden as they cool).
